    I got this recipe online from Simply Recipes. It is so simple! You can add anything you want to it to make it special!

    Recipe: Quesadilla

    Ingredients

    • Large flour tortillas
    • Grated cheese – either mild or sharp cheddar, or Monterrey Jack
    • Olive oil or Grapeseed oil

    Instructions

    1. Heat a large cast iron frying pan (or regular frying pan) to medium high heat.
    2. Add a small amount of oil (about 1/2 teaspoon) and spread it around the bottom of the pan with a spatula (you could use butter as well).
    3. Take one large flour tortilla and place it in the pan. flip the tortilla over a few times, 10 seconds between flips. Air pockets should begin to form withing the tortilla.
    4. When pockets of air begin to form, take a handful of grated cheese, sprinkle over the top of the tortilla, making sure that the cheese does not land on the pan itself. Add whatever additional ingredients yo choose – green onion, sliced mushrooms, olives, tomatoes, etc. If you would like your quesadilla to be a chicken quesadilla, add some diced cooked chicken. Take care not to layer on the ingredients to thickly – this is a quesadilla, not a quiche.
    5. Reduce the heat to low and cover the pan. The cast iron pan should be hot enough by now to have plenty of residual heat to melt the cheese and brown the tortilla. If the quesadilla begins to smoke too much, remove from the heat.
    6. After a minute, check to see if the cheese is melted. When the cheese is sufficiently melted, use a spatula to lift up one side of the quesadilla and flip over the other side, as if you were making an omlette. The tortilla should by now be browned slightly. If it is not browned, turn the heat up to high and flip the quesadilla over every 10 seconds or so until it gets browned.
    7. Remove from pan and cut into wedges.
    8. Serve with salsa, sour cream, and guacamole.

    Utensils Needed:

    • Large frying pan
    • Tongs
    • Spatula

    • Sliced mushrooms
    • Green onions
    • Black olives, sliced
    • Fresh tomatoes, diced
    • Chicken pieces
    • Avocado

    Cooking time (duration): 5 minutes

    Number of servings (yield): 1

    Asian Chicken NoodlesRecipe: Asian Chicken ‘n Noodles

    Ingredients

    • 1-1/2 c. Water
    • 1 pkg. (3 oz.) Ramen Noodle soup mix
    • 1 medium carrot, thinly sliced
    • 1 pkg. (6 oz) Oscar Mayer (or Perdue) grilled chicken breast strips
    • 2 T. green onion slices (optional)

    Instructions

    1. Bring water to boil in medium saucepan.
    2. Add noodles and carrots; cook 3 minutes.
    3. Add chicken breast strips and 1 t. of the seasoning (from ramen soup package); mix well.
    4. Discard remaining seasoning.
    5. Cook until heated through, stirring occasionally.
    6. Sprinkle with onions.

    Utensils Needed:

    • Medium saucepan
    • Measuring cup
    • Vegetable peeler

    Cooking time (duration): 15 minutes

    Meal type: Dinner

    Making spaghetti sounds simple enough but I have found a “recipe” to make it tastey and easy!

    Recipe: Spaghetti

    Ingredients

    • 1/2 jar Spaghetti Sauce
    • 1/2 lb. Ground Beef
    • Onion chopped (optional)
    • 1/2 lb. Spaghetti
    • 1/2 gal. water
    • Utensils Needed:

    • Skillet
    • Saucepan
    • Stock pot (or big saucepan)
    • Spoons

    Instructions

    1. Crumble and brown meat and onion in a skillet, drain well.
    2. Cook spaghetti as instructed below.
    3. Pour sauce into a GLASS bowl, add the drained meat mixture, stir, cover with lid (important), place in microwave and heat on high for about 5 minutes.
    4. When spaghetti is done and sauce is heated, serve as you like.
    5. Perfect Pasta:

    6. Place spaghetti into a deep pot of boiling water. The excess water helps to prevent sticking, and allows the starch to cook off.
    7. After adding spaghetti, return the water to a rolling boil (do NOT cover with lid). Boil spaghetti for 2 MINUTES EXACTLY, then cover with lid, and remove pot from fire, let set for 5 MINUTES for el dente (firm) spaghetti.
    8. Drain toss with oil or butter – olive oil is best. Or better yet, instead of coating with oil or butter mix in a LITTLE big of the sauce, because adding oil may keep the sauce from sticking to the pasta.

    Quick Notes

    When draining pasta in a colander, heat the colander with hot water first, because a cold colander will make the pasta stick together.

    1 lb. uncooked spaghetti equals 4 servings.

    Cooking time (duration): 20 minutes

    Number of servings (yield): 2

    Today’s recipe is Super Simple – Sloppy Joe’s. Now I know, Sloppy Joe’s can be super, super easy – open a can and heat. But this recipe is also easy – even the guys can do it! Guys – try this recipe, it will impress your girl! Girls – try this recipe, it will impress your guy & your mom! The great thing about this is that this is finished is 15 minutes.

    Simple Sloppy Joe’s

    Ingredient:

    • Hamburger
    • Ketchup
    • Mustard
    • Brown Sugar

    Utensils Needed:

    • Skillet
    • Spoon
    • Directions:

    Brown ground beef on medium until brown (you can add salt and pepper while beef is browning). Drain grease (not down your sink, into that old  spaghetti jar you have hanging around!).

    Add ketchup, mustard, & brown sugar. This is the really simple part – you add as much or as little as you like. For 1 lb. of ground beef, I add 3 “teaspoons” of brown sugar (it helps to cut down the acidity of the ketchup and adds a sweetness) – I use a real spoon to measure this one! Stir thoroughly – until all ingredients are blended.

    Cook on medium for 3 – 5 minutes.

    Enjoy your Sloppy Joe on a whole wheat bun or sandwich flat.

    Add a steamed vegetable and you’ve got a great meal! Dinner done in 15 minutes!

    Here is a simple recipe that is a take off from traditional Spaghetti.
    Spaghetti Pie Recipe

    Ingredients:

    • 6 oz. Uncooked spaghetti
    • 1 lb. Ground beef
    • ¼ c. sliced celery (I leave this out)
    • 15 ½ oz. Jar prepared spaghetti sauce
    • 4.5 oz. Jar sliced mushrooms, drained (I have left this out, or buy the spaghetti sauce with mushrooms!)
    • 2 eggs, slightly beaten
    • 1/3 c. grated Parmesan cheese
    • ½ t. garlic salt
    • Parmesan cheese

    Utensils Needed:

    • 9″ Pie Plate
    • Saucepan
    • Skillet
    • 1 mixing bowl (large enough for spaghetti, etc.)
    • Spoon to mix

    Directions:
    Heat oven to 350 F. Grease 10-inch pie pan or 9-inch square pan. Cook spaghetti to desired doneness as directed on package; drain. Set aside.

    In large skillet, brown ground beef with celery, drain. Stir in prepared spaghetti sauce and mushrooms. Simmer 15 minutes.

    Combine cooked spaghetti, eggs, 1/3 c. Parmesan cheese and garlic salt; toss lightly. Place spaghetti mixture in prepared pan. Press evenly in bottom and up sides of pan, forming a crust. Pour meat mixture over spaghetti; cover with foil. Bake at 350 F for 25 to 30 minutes. Remove foil; let stand 5 minutes before serving. Sprinkle with Parmesan cheese. 6 servings.

    Spaghetti Pie...all gone!
